About Phryg

Phryg (pronounced "frij") was founded in San Diego, California with a focus on quality ingredients and convenient brewing methods.

The name originates from an abbreviated version of the Phrygian cap, a symbol of freedom, and is a pun on fridge. Phryg aims to liberate our views of how tea and coffee should be brewed. Conventional coffees and teas are brewed hot, suppressing the flavorful essence of the beverage. We have discovered that cold brew unleashes their full potential, setting free a whole spectrum of taste — and it could be healthier as well.

Our mission is to make your coffee and tea experience simpler and more enjoyable. We accomplish this by sourcing the best leaves and beans, as well as perfecting the easiest and tastiest methods for cold brew. 

 

Why brew cold?

When brewing cold, the tea or coffee is never immersed in hot water. This primarily has three benefits - preserving illusive flavors, making it easier to brew tea or coffee, and brewing less acidic beverages.

It is easier to brew cold than many of the conventional brewing methods for coffee or tea. Simply put, you are adding coffee or tea into a pouch, then into a container that is placed in the fridge overnight. When fully steeped, the pouch is removed and you have a great tasting beverage that lasts one to two weeks when kept refrigerated. So when it comes time to drink, you just open the fridge and pour your cup. You can even heat up your beverage on the stove, in a kettle or in the microwave if you are craving a hot drink (just avoid boiling to preserve the taste and health benefits). 

Especially with cold brew coffee, the resulting beverage can be up to 67% less acidic. This may be of benefit to those who suffer from heartburn, acid reflux or other related complications.

Phrygia was an ancient kingdom in Anatolia (c. 1200-700 BC)*. Their famous cap became a symbol of freedom through a mistaken relation to the pileus of Ancient Rome. 

Passed down through generations, the Phrygian cap now symbolizes freedom depicted in the Seal of the US Senate and on top of a liberty pole in the seal of the Department of the Army. The Phrygian cap is also a symbol of the French Revolution and is featured on the Cuban Coat of Arms. From the steppes of Asia minor, to the banks of the Potomac, to the streets of Paris, and nestled within this website, the Phrygian cap continues its revolutionary legacy.

When Phryg Coffee launched in 2015, it quickly expanded into specialty grocery stores and retail locations throughout San Diego and Orange County. Our early vision of the company launched at a USO Tournament in 2015, so the association is never lost on us. We are patriots and purveyors of freedom from the conventional notion that coffee and tea is best brewed hot.
